Vegan Cashew Queso + Bonus Fruity Frozen Marg Recipe

Ingredients

1 cup raw cashews, boiled in water for 10-15 minutes, then strained

1 cup hot water (can use the water cashews were boiled in)

2 rounded tbs nutritional yeast

1/3 cup + 1 tsp plain tomato/marinara sauce

1 tsp salt

1/2 tsp turmeric 

1/2 tsp cajun seasoning 

2 tsp agave nectar

Serving ideas:

 

Enjoy with tacos, tortilla chips, with veggies (raw or sauteed), or straight from the pot.

Instructions

1) After the cashews have cooled, blend all of the ingredients together, scraping down the sides of your blender as necessary, until the mixture becomes smooth and creamy. Depending on the power of your blender, this process can take 5-10 minutes or more. 

 

2) Pour out the mixture into a pot and boil until it becomes thickened. 

 

3) Enjoy!

Cocktail pairing: a frozen fruity margarita!


Ingredients - Frozen Fruity Margarita (Bonus Recipe!)

A bonus recipe to slosh your quarantine troubles away! Serves 2. 

 

1 cup frozen fruit of choice (I like dragon fruit, but strawberries, pineapples, and mango would be great, too!)

2 cups of ice

1/2 cup tequila

1/4 cup triple sec

Juice of one lime

Instructions

1) Place all of the ingredients into an electric mixer. Blend for 3 seconds, until all of the ingredients just start to swirl. Pulse until you get the desired consistency (~10 times). Do not over mix. 

 

2) Pour into chilled glass, garnish with a wedge of orange or lime, and enjoy!
