Vegan Cashew Sour Cream

Ingredients

1.5 cups of cashews, soaked for 3-4 hours, or boiled for 10-15 minutes, then strained

6-7 tbsp lemon juice (about 1 3/4 of a small-medium lemon) 

3/4 cup water

4-5 tsp apple cider vinegar

1 tsp salt, or more to taste

 

Optional

Sprinkle fresh or dried dill for garnish

Dollop this atop everything? Yes. I've enjoyed this with a hearty chili, tomato soup, & vegan borscht. 

Instructions

1) Blend all of the ingredients together, scraping down the sides of your blender as necessary, until the mixture becomes as smooth as possible. *Depending on the power of your blender, this process can take 10-15 minutes or more. 

 

2) Scrape out the mixture into a a container or bowl, and let it sit in the refrigerator for at least 1-2 hours. 

 

3) Serve and enjoy!
